In the beginning I used the tags feeds to have a single feed for all podcasts of a certain category. But now I have a feed for each podcast like normal people.

Might be a bit confusing at first, but after setting it up, it does exactly what I want. Easy to listen to podcast on my iPhone, including setting speed & sleep timer and the server fetches the new episodes every day.

Audiobookshelf is the answer

Audiobookshelf is by far my most used selfhosted app, mostly due to podcasts. It’s awesome, really wish the dev would accept donations.
I love Audiobookshelf for audiobooks, didn’t realize it supported podcasts as well. I will have to look into that, thanks!
Antennapod x Nextcloud or GPodder
I use Kasts (desktop) and AntennaPod (mobile) with GpodderSync on Nextcloud to store the subscriptions and episodes states.
